Ask Me Anything! – Swordfish

Question:

Love the blog. Besides grilling, what can you recommend with swordfish?

Answer:

We, typically, don’t eat a lot of swordfish. However, I’ll give what advice I can 🙂

Hot and fast is the best way to cook swordfish steaks — which is why grilling them is so popular. Another hot and fast alternative, though, is to broil them in your oven…would that be an agreeable option for you?

For steaks, usually 8-10 minutes per side will do it, and give you a nice carmalization. For fillets, you’ll want to cut that time drastically.

If you’re marinating, I’ve had the best luck with marinades that contain oil…it keeps the fish juicy under the extreme heat of the broiler/grill.

Whew. DH and I got nailed with The Plague of 2010 last weekend and it took us most of last week to recover! Needless to say, we didn’t stick to the meal plan. Here’s hoping for a better week this time!

We’re in a bit of a food rut here lately — has anyone tried anything new recently that was delicious?? My Google Reader is full of desserts…not dinners! LOL


Saturday: Beef stroganoff (recycled from the past week…we never ended up having it), salad

Sunday: Not sure — FIL coming over for dinner

Monday: filet mignon, garlic green beans, pasta

Tuesday: leftover stroganoff, steamed cauliflower

Wednesday: ham (slices i froze from easter), annie’s mac and cheese, steamed broccoli

Thursday: marinated grilled chicken breasts, garlic rice pilaf, salad

Friday: None for now — we have plans!

Last week’s menu plan went by the wayside after Tuesday, because I had a nasty stomach virus and DH wasn’t feeling well either.

Here’s hoping we’re back on track this week!

Monday: beef steak, steamed broccoli, pasta tossed with olive oil

Tuesday: quick turkey chili with fixin’s

Wednesday: salmon, wild rice, garlic green beans

Thursday: skillet beef stroganoff (made with venison, though!), salad

Friday: Headed to our first baseball game of the season, and will eat at the game!

Another week! How did we get here so fast? LOL

Life’s been busy — haven’t been many new recipes here. Alas, my list of recipes to try is nearly all desserts! Ack! I can’t just make desserts for dinner. LOL I’m going to try to find some new ones to try for dinner…and maybe start making some of those desserts!

We had a pair of friends who recently had a baby, so I spent Sunday making food for them — wore me out to stand on my feet all day. I don’t know how people do it!!

Saturday: leftover ham from easter, annie’s mac and cheese, green beans

Sunday: takeout (pizza and salad) for dinner, but made food for the new parents in our group:

Monday: venison steak, steamed cauliflower, pasta

Tuesday: sunken burritos with lettuce, tomato, sour cream and guacamole

Wednesday: salmon, wild rice, broccoli

Thursday: leftover burritos

Friday: spaghetti with meat sauce, salad
