Monday: venison steaks, cauliflower, pasta
Tuesday: salmon with lemon, wild rice, broccoli
Wednesday: spaghetti and turkey meatballs, salqd and garlic bread
Thursday: traveling for easter
Friday: spending time with family!

Ask Me Anything! – Garlic Lemon Shrimp with Orzo and Broccoli

Question:

My husband can’t eat shrimp, but I really wanted to try the Garlic Lemon Shrimp with Orzo and broccoli recipe.  I was very pleased to see that you adapted it for chicken instead.  I was wondering, though, can I substitue Arborio rice (I already have some on hand) for orzo in this recipe instead or do I have to use orzo?

Answer:

Arborio rice is used mostly for risottos, and needs a different cooking method (a little bit of broth at a time, until all combined, then more, etc). I’d say you could try it, but my hunch is you want to stick with the orzo. Orzo isn’t a rice — actually, a pasta — and the starchy item in this dish needs to be pre-cooked before you add it. You might also get away with using plain rice (precook it) and adding it, but I think I would stick with the orzo if I could.

Saturday: Mother-in-law’s halushki (spelling?), mashed potatoes

Sunday: Leftover garlic lemon chicken with orzo and broccoli

Monday: venison steaks, steamed broccoli, pasta for DH, sweet potato for me

Tuesday: spinach and sausage stuffed shells, salad, homemade bread

Wednesday: spicy honey chicken, roasted potatoes, sauteed green beans in garlic

Thursday: leftover stuffed shells

Friday: was supposed to be leftover chicken, but, it looks like the in laws are coming over for dinner, so i’ll need to figure out what i’m feeding them!

Saturday: Leftover chicken cordon bleu casserole

Sunday: Takeout (pizza!)

Prep Work:

  • Make and cook turkey meatballs for Tuesday
  • Cook chicken for Thursday
  • Chop broccoli and salad fixin’s for the week
  • Cut up ripe cantaloupe

Monday: beef steak, green beans, pasta

Tuesday: spaghetti with turkey meatballs, salad

Wednesday: salmon, risotto, steamed cauliflower

Thursday: chicken with orzo and broccoli (using my shrimp with orzo and broccoli recipe…with chicken)

Friday: venison burgers on the grill (because spring is finally showing it’s face here in PA!), unsure about sides yet

This is a fast post — it was a crazy weekend!

Saturday: Take-out with a buddy – chinese!

Sunday: Hosted a CABi party…we had:

  • Monkey Bread
  • Fruit (Apples, grapes, strawberries and pineapple) with fruit dip
  • Egg casserole with sausage and potatoes

Dinner was subway.

Monday: venison, broccoli, pasta

Tuesday: sloppy joes, salad

Wednesday: chicken cordon bleu casserole; italian veggie medley

Thursday: leftover sloppy joes, cauliflower

Friday: salmon, wild rice, green beans

I couldn’t decide what I wanted for my birthday dinner this weekend, so I traded in my expensive single meal for two moderately-priced meals. LOL

Saturday, I got my seafood fix with crabcakes, and Tuesday or next Saturday, I’ll get my mexican food fix. Perfect!

Saturday: out for my birthday

Sunday: pizza to watch the closing ceremonies and hockey with

Monday: filet mignon, steamed broccoli, pasta

Tuesday: out for mexican? or  crockpot pork roast studded with garlic, rice, cauliflower

Wednesday: salmon, wild rice, green beans

Thursday: leftover pork roast

Friday: chicken sausage, onion, and pepper sandwiches, trying annie’s new fries, salad
